Frames are taken from the hive only once the bees have capped the cells with wax, which means the honey is ripe. We uncap by hand, spin the frames at room temperature, and strain through a coarse mesh. Nothing is heated.

Yes. Raw means it is never pasteurised. Unfiltered means it goes through mesh to catch wax and nothing finer, so the pollen stays in. That is why it is cloudy and why it eventually sets.

No — it is the opposite. Crystallising is what real honey does. Stand the jar in warm water for fifteen minutes and stir. Never microwave or boil it.

A cupboard at room temperature, away from direct sun. Do not refrigerate. Use a dry spoon every time.
