From hive to jar

How the honey is made

The order is the whole point. Nothing here is sped up.

  1. The bees do the work

    Colonies forage within about three kilometres of the hillside. What flowers there decides what the honey tastes like.

  2. We take only the capped frames

    Bees seal a cell with wax when the honey is ready. Uncapped frames go back on the hive.

  3. Cold spin, mesh strain

    Frames are uncapped by hand and spun at room temperature, then strained through a coarse mesh to catch wax.

  4. Settle, taste, jar

    It rests for two days so air bubbles rise, gets tasted and moisture-tested, then goes into numbered jars.
